Filet Mignon

This tender filet mignon recipe is a family favorite for when we want to celebrate with something truly special.

Amy LaBelle's Filet Mignon Recipe:


Ingredients:

  • 8oz Filet steaks (4ea)

  • 1 bottle of LaBelle Winery Malbec Wine or a dry red wine

  • 1/2 cup chopped shallots

  • 1/4 cup chopped garlic

  • 2 sprigs rosemary

  • 2 sprigs thyme

  • 2 bay leaves

  • 1 Tbsp butter

  • Pinch of sea salt

  • Pinch of black pepper 


Ingredients For Red Wine Pan Sauce:

  • 1 tsp butter, more may be used

  • 1 sprig fresh rosemary

  • 2 cloves of garlic, smashed

  • 1.5 cups of LaBelle Winery Malbec Wine or a dry red wine

  • Sea salt and black pepper to taste

     

Directions:

  1. Combine all ingredients and pour over steaks. Allow to marinate in the fridge for 1-2 hours.

  2. Remove the steaks from the marinade and pat dry.

  3. Season with sea salt and black pepper.

  4. Sear in hot pan or on grill for 3-4 minutes per side. On the second side sear, add butter to the top of the steak to melt as it sears. Steaks are cooked once the internal temperature reaches 125 degrees Fahrenheit. 

  5. Remove from heat and allow to rest for 2-3 minutes before serving.


Directions for Red Wine Pan Sauce:

  1. After searing the filets, add butter to the hot pan over medium heat.

  2. Add rosemary and garlic and cook about 30 seconds or just until fragrant.

  3. Stir in LaBelle Winery Malbec Wine and cook until liquids have reduced by half. Be sure to scrap up the brown bits from the bottom of the pan into the liquids.

  4. Reduce heat to simmer and let cook until reduced and thickened slightly.

  5. Season with sea salt and black pepper, spoon over the filets for serving. 


Amy's Recipe Tips:

Use a cast-iron skillet for the best crust and finish your filet with a touch of butter for that restaurant-quality shine!
