Roasted Asparagus

This Roasted Asparagus is one of my favorite simple side dishes that goes great with any protein you may be serving. It’s fresh, flavorful, and always brings a little brightness to our family table!




Amy LaBelle's Roasted Asparagus Recipe:

This recipe makes 4 servings.


Ingredients:

  • 1 pound of asparagus, hard bottoms snapped or trimmed off

  • 1/4 cup vegetable oil

  • Zest from 1 lemon

  • Sea salt and black pepper, to taste

     

Directions:

  1. Pre-heat oven to 450 degrees Fahrenheit.

  2. Place asparagus on sheet pan in a single layer.

  3. Drizzle with oil, salt, pepper and lemon zest.

  4. Roast in oven for 5 minutes or until bright green.
